I am the Mac & Cheese Chick.

Ever had that moment where, in the midst of a bad day, the only thing you want to do is dive in to a big, gooey, steaming pot of mac and cheese to make the problems go away and make everything right with the world? I am your enabler. Go ahead. Do it. Dive right in! I’m the devil on your shoulder, egging you on while you demolish your bowl of gooey goodness, reveling in the lovely, happy glow that only a great bowl of mac and cheese can bring. Feeling celebratory? A nice big bowl of mac and cheese only intensifies the feelings of joy. Can a bowl of mac and cheese make everything right with the world? I tend to think so.

Something about mac and cheese takes us all back to childhood and happy memories. Against all odds we LOVE the simple combination of noodles and cheese. So simple, yet so absolutely sublime. Even most foodies will tell you, heads hung in shame, that there’s a special spot in their hearts for mac and cheese from a box. Powder or pouch, the bright orange of boxed mac and cheese holds a powerful spell over most of us. Which is why you’re here, of course. To indulge your mac and cheese cravings.

Growing up, the argument moved from Powder or Pouch to Stovetop or Baked, but my love of mac and cheese powered on. Ramen noodles in college? Not for me…I stocked mac and cheese instead. And while I developed an overall love of cooking in college, my true love remained mac and cheese. If you’re still reading, I know you’re right there with me. All grown up; I still make mac and cheese at least once a week. I’m currently perfecting a low-fat recipe that doesn’t sacrifice the amazing gooey substance, heft and mouth feel that you get with an amazing full-fat mac and cheese. It’s still a work in progress but if I do end up perfecting it, you’ll find the recipe right here.

I started this blog because I figured there was no way I could be the only one enamored with mac and cheese as an adult. So, I’m bringing you with me as I try recipes and taste my way through restaurants in search of the most sublime bowl of mac and cheese ever.

    Stumbled upon your blog by accident but, I know I will be happy. I, too, for a year or so, was on a “perfect the mac n cheese” recipe. My family got quite tired of it! So, nice to know there are others of us out there. I look forward to trying your recipes.
